This year we'll offer grass-fed and -finished wagyu beef from Peeler Farms, pastured pork from Peaceful Pork, grass-fed and -finished lamb from Pure Pastures and Capra, pastured poultry from Greener Pastures and Behind the Oaks, and caviar from Minamoto. Plus fresh baked local desserts from Texas French Bread, Baked from Scratch ATX, and Pie Jacked, and imported specialties like duck fat caramels, peppermint bark, gelt, rugelach, and more.

  • Peeler Farms grass-fed and -finished wagyu beef from Floresville, TX. The Peelers go the extra mile on every detail. From their website, "the Peeler Family owns their cattle from birth through finish and processes them at their own USDA processing facility, ensuring complete quality control. The Wagyu cattle come from the highest-quality lineages, benefit from ethical breeding and humane treatment, and are never fed hormones or antibiotics."
  • Peaceful Pork pastured heritage pork from Sandia, TX. Now officially "Michelin Star pork." Peaceful is the proud supplier to recently named Michelin Star Austin restaurants — LeRoy & Lewis, Dai Due, and more.
  • Pure Pastures grass-fed and -finished Dorper lamb from Canyon Lake, TX. Pure Pastures is a family owned, multi-species grazing operation, run in partnership by the Eubank and Moorman families. They are dedicated to regenerative agriculture practices to provide nutrient dense and deeply flavorful meat from the Texas hill country.
  • Capra grass-fed and -finished Dorper lamb from Goldthwaite, TX. Capra is a Global Animal Partner (GAP) certified network of pasture-raised, regenerative lamb.
  • Greener Pastures pasture-raised chicken from Elgin, TX. Greener Pasture raises the highest integrity chicken — pasture-raised and rotated daily, certified organic, no antibiotics or growth hormones, and the chickens are processed on site to reduce stress on the animal. Happy chickens, raised on green pastures right here in Central Texas.
  • Behind the Oaks pasture-raised turkey from Schertz, TX. Owned and operated by Zachary and Samantha Platt. Samantha is the third generation to operate the farm in Schertz, TX, and Zack married into the farm life over 14 years ago. They use regenerative practices to raise grass-fed beef, pasture-raised pork, and pasture-raised poultry and eggs.
  • Minamoto gulf-caught seafood. Minamoto is a seafood wholesaler with direct relationships with fishing boats in the Gulf and direct traceability from catch to plate.
  • Texas French Bread Pies. Fresh baked pecan, chocolate pecan, apple, and cranberry pies made from scratch with 100% organic grains from Barton Springs Mill and Central Milling and no preservatives. Texas French Bread is a 40-year Austin icon.
